Black Bean Cookies

Cook: 10-12 minutes

Ingredients

  • 1 can black beans - low sodium
  • 2 tbsp milk
  • 2 tbsp peanut butter
  • 2 tbsp olive oil
  • 3 tbsp flour
  • 1 tbsp cocoa powder
  • 2 cups sugar
  • 1 tbsp baking powder
  • 1 tsp vanilla
  • Pinch of cinnamon
  • 1/3 cup dark chocolate
  • 1/3 cup chocolate chips

Instructions

  1. Preheat oven to 375°F.
  2. Rinse black beans well.
  3. Combine black beans, milk, peanut butter, and olive oil in a blender until smooth.
  4. Add flour, cocoa powder, sugar, baking powder, vanilla, and cinnamon to the mixture.
  5. Blend until mousse-like.
  6. Stir in 1/3 cup chocolate chips.
  7. Scoop onto baking sheet.
  8. Sprinkle chips on top.
  9. Bake for 10-12 minutes.
