Black Bean Cookies¶

Ingredients¶
- 1 can black beans - low sodium
- 2 tbsp milk
- 2 tbsp peanut butter
- 2 tbsp olive oil
- 3 tbsp flour
- 1 tbsp cocoa powder
- 2 cups sugar
- 1 tbsp baking powder
- 1 tsp vanilla
- Pinch of cinnamon
- 1/3 cup dark chocolate
- 1/3 cup chocolate chips
Instructions¶
- Preheat oven to 375°F.
- Rinse black beans well.
- Combine black beans, milk, peanut butter, and olive oil in a blender until smooth.
- Add flour, cocoa powder, sugar, baking powder, vanilla, and cinnamon to the mixture.
- Blend until mousse-like.
- Stir in 1/3 cup chocolate chips.
- Scoop onto baking sheet.
- Sprinkle chips on top.
- Bake for 10-12 minutes.
