Caramel Apple Cheesecake

Ingredients

  • 1 can lucky leaf apple pie filling (21 oz)
  • 1 graham cracker crust
  • 2 pkgs cream cheese, softened
  • 1/2 cup sugar
  • 1/4 tsp vanilla
  • 2 eggs
  • 1/4 cup caramel topping
  • 12 pecan halves
  • 2 TBS chopped pecans

Instructions

  1. Reserve 3/4 c. pie filling. Spoon remaining filling into crust.
  2. Blend cream cheese, sugar, and vanilla. Beat in eggs. Pour over pie filling in crust.
  3. Bake at 350°F for 35 min or until center is set. Cool.
  4. Meanwhile, combine reserved pie filling and caramel topping. Heat to soften.
  5. Spoon evenly over top, spreading to within 1 inch of crust edge.
  6. Arrange pecan halves around outer edge and sprinkle chopped nuts over center.
  7. Serve 15.
