Chocolate Chip Strawberry Ice Cream Sandwiches

Ingredients

  • 8 Pepperidge Farm Soft Baked Montauk milk chocolate cookies
  • 1/2 (14-oz) container Häagen-Dazs strawberry ice cream, slightly softened
  • 8 strawberries, sliced [optional]
  • 1/2 (11-oz) package semi-sweet chocolate chips
  • 1 Tbsp canola oil

Instructions

  1. Arrange 4 cookies flat side up in a single layer. Spread with ice cream. Top with berries, if desired, and another cookie. Wrap in plastic and freeze for at least 1 hour.
  2. Combine chips and oil in a small bowl. Microwave on medium in 30-second increments until chocolate is melted. Let cool slightly, then dip half of ice cream sandwich into chocolate. Wrap cooled sandwich in plastic and freeze for 1 hour.
