Cilantro Lime Chicken with Black Beans & Rice

Ingredients

  • 1 lb boneless chicken breast
  • 1 TBS canola oil
  • Salt & pepper
  • 4 green onions, chopped
  • 2 cloves garlic
  • 1/2 cup chicken broth
  • 1 (4 oz) can green chilies
  • 2 TBS olive oil
  • 3 TBS lime juice
  • 1 (14.5 oz) can black beans, rinsed & drained
  • 2 cups Minute Rice
  • 1/3 cup cilantro

Instructions

  1. Heat oil until hot. Add chicken, salt & pepper, and sauté until cooked through, about 6 minutes.
  2. Add lighter portions of green onions and garlic during last minute of cooking.
  3. Stir in chicken broth, green onions, green chilies, lime zest, black beans, lime juice, salt & pepper to taste.
  4. Bring mixture to a boil.
  5. Add rice, fully immerse rice in broth, and allow to boil for 20 seconds.
  6. Remove from heat, cover, and let stand for 5-6 minutes.
  7. Toss in cilantro and let stand uncovered for 3 minutes.
