Cilantro Lime Chicken with Black Beans & Rice
Ingredients
- 1 lb boneless chicken breast
- 1 TBS canola oil
- Salt & pepper
- 4 green onions, chopped
- 2 cloves garlic
- 1/2 cup chicken broth
- 1 (4 oz) can green chilies
- 2 TBS olive oil
- 3 TBS lime juice
- 1 (14.5 oz) can black beans, rinsed & drained
- 2 cups Minute Rice
- 1/3 cup cilantro
Instructions
- Heat oil until hot. Add chicken, salt & pepper, and sauté until cooked through, about 6 minutes.
- Add lighter portions of green onions and garlic during last minute of cooking.
- Stir in chicken broth, green onions, green chilies, lime zest, black beans, lime juice, salt & pepper to taste.
- Bring mixture to a boil.
- Add rice, fully immerse rice in broth, and allow to boil for 20 seconds.
- Remove from heat, cover, and let stand for 5-6 minutes.
- Toss in cilantro and let stand uncovered for 3 minutes.
