Dreamy Double-Garlic Chicken-Spinach Alfredo¶

Ingredients¶
- 1 lb. fettuccine
- 1 tbsp. olive oil
- 1 lb. boneless, skinless chicken breast, cut into 1-inch pieces
- 1 small onion, chopped
- 3 cloves garlic, chopped
- 1/2 cup dry white wine (optional)
- 1 (1-lb.) jar Alfredo sauce
- 1/4 cup milk
- 2 tbsp. sour cream
- 2 tbsp. cream cheese
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- 1 tbsp. fresh chopped parsley or dried parsley flakes
- 1/4 tsp. pepper
Instructions¶
- Cook pasta according to package directions; drain and keep warm.
- While pasta cooks, in large nonstick skillet, heat oil over medium-high heat. Add chicken, onion, and chopped garlic; cook, stirring often, 6 to 8 minutes or until chicken is no longer pink. Add wine, if desired; cook 1 to 2 minutes or until most of liquid evaporates.
- Reduce heat to low and stir in Alfredo sauce, milk, sour cream, cream cheese and Parmesan. Cook, stirring often, 2 to 3 minutes or until cream cheese melts and sauce is heated through. Stir in spinach; cook 2 minutes or until spinach wilts. Stir in minced garlic, parsley and pepper. Serve over fettuccine.
