Katy's Refrigerator Kumquat Pie

Ingredients

  • 1 9" Graham cracker pie crust
  • 1 reg. (8oz.) Cool whip
  • 2/3 cup pureed kumquats
  • 1 can sweetened condensed milk
  • 1/2 cup fresh lemon juice

Instructions

  1. Beat condensed milk and cool whip.
  2. Add lemon juice slowly and beat until thickened.
  3. Add Kumquat puree – mix well.
  4. Pour mixture into pie shell and garnish with Kumquat puree.
  5. Chill in freezer.
  6. Serve frozen or chilled.
  7. For an extra special treat, drizzle chocolate over pie before serving.
