Mary's Greek Stew¶
Ingredients¶
- stew meat
- olive oil
- 2 cloves of chopped garlic
- 1 teaspoon cinnamon
- 2 tablespoons wine vinegar
- 2 bay leaves
- salt and pepper
- 2 thinly sliced yellow onions
- fresh green beans
- small can of tomato sauce
- can of water
- 2-3 cubed potatoes
Instructions¶
- Brown stew meat in some olive oil.
- Add 2 cloves of chopped garlic, 1 teaspoon cinnamon, 2 tablespoons wine vinegar, 2 bay leaves, salt and pepper.
- Continue to simmer covered on low heat.
- Add 2 thinly sliced yellow onions and fresh green beans.
- Add a small can of tomato sauce with a can of water, let it simmer on low for about 30 minutes.
- Add cubed potatoes (2-3), add more water to almost cover and simmer on low, covered for about 1 hour or until the potatoes are tender and sauce thickens.
- The more time it simmers, the better. Season to taste.
Notes¶
You can add carrots or eggplant. Cinnamon and wine vinegar can be increased according to taste. Best to go easy on the cinnamon so as not to overpower, and garlic is your friend in this recipe. Serve with lots of crusty Greek bread to sop up all that awesome red gravy.
