Mexican Wedding Cake

Cook: 35 minutes | Servings: 9 x 13 pan

Ingredients

  • 2 c. sugar
  • 2 c. flour
  • 2 eggs, slightly beaten
  • 1 (20 oz.) can crushed pineapple
  • 2 tsp. baking soda
  • 1 c. chopped nuts
  • 1 stick butter
  • 1 1/2 c. powdered sugar
  • 1 tsp. vanilla
  • 1 (8 oz.) pkg. cream cheese

Instructions

  1. Mix sugar, flour, eggs, crushed pineapple, baking soda, and chopped nuts.
  2. Bake 35 minutes at 350 degrees in a 9 x 13 pan.
  3. For icing, mix butter, powdered sugar, vanilla, and cream cheese.
