Mocha Chocolate Cookies

Cook: 7 to 10 minutes | Servings: about 5 dozen cookies

Ingredients

  • 4 teaspoons instant espresso coffee (dry)
  • 2 teaspoons vanilla
  • 1 box butter-recipe chocolate cake mix (Betty Crocker used)
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 cup miniature semisweet chocolate chips

Instructions

  1. Heat oven to 350 degrees.
  2. In small bowl, stir together coffee and vanilla until coffee is dissolved.
  3. In large mixing bowl, combine cake mix, coffee mixture, butter and eggs until soft dough forms.
  4. Stir in chocolate chips.
  5. On ungreased cookie sheets, drop dough by rounded teaspoonfuls about 2 inches apart.
  6. Bake 7 to 10 minutes or until surface appears dry.
  7. Cool 1 minute on baking sheet and remove to cooling rack.
