No Bake Chocolate Oat Bars

Ingredients

  • 1 cup butter
  • 1/2 cup packed brown sugar
  • 1 tsp vanilla
  • 3 cups quick oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Melt butter, stir in brown sugar and vanilla.
  2. Mix in oats, cook over low heat 2-3 minutes until well blended.
  3. Press half mixture into bottom of prepared pan, reserve other half for topping.
  4. Melt chocolate chips and pour over crust in pan and spread evenly.
  5. Crumble remaining mixture over chocolate, pressing gently.
  6. Refrigerate 3 hours, bring to room temperature before cutting into bars.
