Potato Bacon Chowder

Ingredients

  • 5 slices bacon
  • 1/2 C chopped onion
  • 1/4 C chopped green (red) pepper
  • 1/2 C chopped celery
  • 1/4 C flour
  • 3 C chicken stock
  • 3 medium potatoes, peeled and diced
  • 1 (13 ounce) can evaporated milk
  • 1/3 C milk
  • 1/2 C shredded sharp cheddar cheese
  • Pinch of nutmeg
  • Parsley for garnish

Instructions

  1. Saute bacon until almost crisp.
  2. Add onions, green pepper and celery; saute until transparent.
  3. Add flour; cook, stirring for 2-3 minutes.
  4. Add chicken broth, gradually letting it thicken before adding more of the broth.
  5. Add evaporated milk and milk; simmer several minutes.
  6. Add potatoes, salt and pepper to taste.
  7. Simmer until potatoes are tender.
  8. Gradually add cheese, stirring until melted.
  9. Add pinch of nutmeg, garnish with parsley.

Notes

I always put extra of the top 6 items. Add clams. Add Harvest vegetable mix Hannaford.
