Potato Bacon Chowder¶
Ingredients¶
- 5 slices bacon
- 1/2 C chopped onion
- 1/4 C chopped green (red) pepper
- 1/2 C chopped celery
- 1/4 C flour
- 3 C chicken stock
- 3 medium potatoes, peeled and diced
- 1 (13 ounce) can evaporated milk
- 1/3 C milk
- 1/2 C shredded sharp cheddar cheese
- Pinch of nutmeg
- Parsley for garnish
Instructions¶
- Saute bacon until almost crisp.
- Add onions, green pepper and celery; saute until transparent.
- Add flour; cook, stirring for 2-3 minutes.
- Add chicken broth, gradually letting it thicken before adding more of the broth.
- Add evaporated milk and milk; simmer several minutes.
- Add potatoes, salt and pepper to taste.
- Simmer until potatoes are tender.
- Gradually add cheese, stirring until melted.
- Add pinch of nutmeg, garnish with parsley.
Notes¶
I always put extra of the top 6 items. Add clams. Add Harvest vegetable mix Hannaford.
