Rigatoni Casserole

Ingredients

  • 1 lb hamburger
  • 16 oz rigatoni noodles
  • 3 oz small curd cottage cheese or ricotta cheese (I use ricotta)
  • 32 oz tomato sauce (or more if you like more red sauce)
  • 16 oz mozzarella cheese (shredded)
  • 1 bunch of green onions (optional)

Instructions

  1. Boil noodles according to instructions; drain and rinse.
  2. Brown hamburger; drain and add tomato sauce and stir until bubbly.
  3. Chop green onions and mix all other ingredients except about 1/2 cup of the mozzarella in a BIG bowl.
  4. Pour into a sprayed 11 x 13 pan, cover with aluminum foil and bake about 40 mins at 350 until bubbly.
  5. Remove and sprinkle with extra cheese and bake uncovered about 5 more mins.
  6. Sauce thickens upon standing.
