Rigatoni Casserole
Ingredients
- 1 lb hamburger
- 16 oz rigatoni noodles
- 3 oz small curd cottage cheese or ricotta cheese (I use ricotta)
- 32 oz tomato sauce (or more if you like more red sauce)
- 16 oz mozzarella cheese (shredded)
- 1 bunch of green onions (optional)
Instructions
- Boil noodles according to instructions; drain and rinse.
- Brown hamburger; drain and add tomato sauce and stir until bubbly.
- Chop green onions and mix all other ingredients except about 1/2 cup of the mozzarella in a BIG bowl.
- Pour into a sprayed 11 x 13 pan, cover with aluminum foil and bake about 40 mins at 350 until bubbly.
- Remove and sprinkle with extra cheese and bake uncovered about 5 more mins.
- Sauce thickens upon standing.
