Slow Cooker Asian Chicken

Ingredients

  • 2 lbs chicken thighs
  • 2 tsp ground ginger
  • 3 tsp garlic powder
  • 1/4 tsp black pepper
  • 9 oz pineapple chunks
  • 8 oz can water chestnuts, drained
  • 1 red pepper, sliced in strips
  • 1 cup chicken broth
  • 2 TBS soy sauce
  • 1 TBS white vinegar
  • 1/4 cup corn starch
  • 4 green onions, sliced diagonally

Instructions

  1. In slow cooker, combine chicken, ginger, garlic powder, and pepper; mix well.
  2. Stir in pineapple, chestnuts, pepper, and chicken broth; cook on low setting.
  3. After cooking, combine in small bowl: soy sauce, vinegar, and corn starch.
  4. Mix in chicken mixture, add green onions.
