Spaghetti Squash

Cook: 8 to 10 minutes

Ingredients

  • 1 3-pound spaghetti squash
  • 1/4 inch water
  • 3 slices chopped bacon
  • 1 chopped onion
  • 3 tablespoons maple syrup
  • 3/4 cup mild salsa
  • Crushed tortilla chips
  • 1/4 cup soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon grated peeled ginger

Instructions

  1. Halve a 3-pound squash lengthwise; scoop out and discard seeds and stringy membranes.
  2. Place squash, cut sides down, in microwave-safe dish; add 1/4 inch water and cover with plastic wrap.
  3. Microwave on High 8 to 10 minutes or until squash is very tender.
  4. Using fork, rake out all pulp strands; transfer to large bowl.
  5. Sweet & Smoky: In microwave-safe bowl, microwave 3 slices chopped bacon and 1 chopped onion on High 4 minutes until bacon is browned; stir once. Toss with squash and 3 tablespoons maple syrup.
  6. Southwestern: Mix squash with 3/4 cup mild salsa; sprinkle with crushed tortilla chips.
  7. Asian: Stir 1/4 cup soy sauce, 1 teaspoon sesame oil, and 1 tablespoon grated peeled ginger into squash.
