Spaghetti Squash¶
Cook: 8 to 10 minutes
Ingredients¶
- 1 3-pound spaghetti squash
- 1/4 inch water
- 3 slices chopped bacon
- 1 chopped onion
- 3 tablespoons maple syrup
- 3/4 cup mild salsa
- Crushed tortilla chips
- 1/4 cup soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon grated peeled ginger
Instructions¶
- Halve a 3-pound squash lengthwise; scoop out and discard seeds and stringy membranes.
- Place squash, cut sides down, in microwave-safe dish; add 1/4 inch water and cover with plastic wrap.
- Microwave on High 8 to 10 minutes or until squash is very tender.
- Using fork, rake out all pulp strands; transfer to large bowl.
- Sweet & Smoky: In microwave-safe bowl, microwave 3 slices chopped bacon and 1 chopped onion on High 4 minutes until bacon is browned; stir once. Toss with squash and 3 tablespoons maple syrup.
- Southwestern: Mix squash with 3/4 cup mild salsa; sprinkle with crushed tortilla chips.
- Asian: Stir 1/4 cup soy sauce, 1 teaspoon sesame oil, and 1 tablespoon grated peeled ginger into squash.
