Traditional Swiss Steak

Ingredients

  • 1 tablespoon vegetable oil
  • 2 pounds beef round steak, 1/4-inch thick
  • 1 large onion, cut in half and sliced into 1/4-inch strips
  • 2 medium bell peppers, sliced into 1/4-inch strips
  • 2 14.5-ounce cans stewed tomatoes
  • 1 14-ounce can beef broth
  • 1 cup water

Instructions

  1. In skillet or Dutch oven, heat oil over medium-high heat.
  2. Saute onion and pepper until onion is translucent. Remove and set aside.
  3. In same skillet, saute round steak until brown.
  4. Add canned tomatoes, beef broth and water.
  5. Add onion and peppers. Turn heat to low and cover with tight-fitting lid.
  6. Simmer 45 minutes or until beef is fork tender, adding more water if sauce becomes too thick.
  7. Or, if using Dutch oven, cover pot with tight-fitting lid and cook in preheated 350-degree oven 1 1/2 to 2 hours.
  8. Serve over rice or egg noodles.
