Yellow Squash Casserole

Cook: 30-45 minutes

Ingredients

  • 2 TBS butter
  • 4 cups sliced yellow squash
  • 1 medium chopped onion
  • 2 eggs
  • 1 cup grated cheddar cheese
  • 1 cup milk
  • 2 TBS butter
  • Salt, pepper
  • Ritz crackers

Instructions

  1. Preheat oven to 350°F.
  2. Melt 2 TBS butter in a skillet and sauté squash and onions until tender.
  3. Whisk eggs in a large bowl lightly, add cheese and milk.
  4. Add squash, stir to combine, add more melted butter, salt, and pepper.
  5. Spray a casserole dish and pour mixture in, top with Ritz crackers.
  6. Bake for 30-45 minutes.
