Yellow Squash Casserole¶

Ingredients¶
- 2 TBS butter
- 4 cups sliced yellow squash
- 1 medium chopped onion
- 2 eggs
- 1 cup grated cheddar cheese
- 1 cup milk
- 2 TBS butter
- Salt, pepper
- Ritz crackers
Instructions¶
- Preheat oven to 350°F.
- Melt 2 TBS butter in a skillet and sauté squash and onions until tender.
- Whisk eggs in a large bowl lightly, add cheese and milk.
- Add squash, stir to combine, add more melted butter, salt, and pepper.
- Spray a casserole dish and pour mixture in, top with Ritz crackers.
- Bake for 30-45 minutes.
